Giving Thanks. This particular holiday is one where our lives do not really change much. We, as a family, tend to be quite thankful on most days. We are always thankful for each other and for our family's. We are thankful for all the abundance we enjoy in this life and realize the fleeting nature of it all... and that it could be taken away in an instant. Other than being thankful alot, we also make amazing meals all the time! So this was just another day for us to do what we always do... be thankful and eat good food! (Ok, maybe more food than usual :)
We stayed home and made an amazing Vegan Holiday loaf.
We found the recipe for this "Roast Beast" on the Post Punk Kitchen website. Should you want to try it. It's pretty easy and really tasty! The only thing we changed was the mushrooms... we used chanterelles and oysters instead of shiitake. It was pure Veg heaven!
We also used the recipe for Green Bean Mushroom Casserole. It turned out great as well.
We made our famous vegan mashers with nutritional yeast gravy and a side of homemade organic cranberry sauce.

After dinner it starting snowing. What luck! Atty enjoyed it!
All in all a wonderful holiday. This year has proved to be quite an eventful one. From moving into a new house, friends and family visiting, trips both North, South, East and West (Northwest one of these days:) Very thankful for everything.
